Oca is a perennial herbaceous plant like underground stem tubers. This plant belongs to the family Oxalidaceae. It’s botanical name is Oxalis tuberosa. You can find different varieties of oca in the Andes. New Zealand is the only cultivator of this particular plant. A South American wood sorrel grown for its edible tubers. This veggie has alternative names like uqa in Quechua, cubio in Spain, New Zealand yam in New Zealand etc.  

You can cook oca in different ways like boiling, baking, roasting, frying, steam cooking etc. If you wish to consume raw oca, slice it up and add in vegetable salads or soups. Raw oca gives a tangy flavor and a crispy texture.
