Ramps also known as wild leeks are edible plants having appearance similar to leeks and contains mild flavor of garlic and onion. Native to North America, this is a perennial plant having whitish flowers and a slender bulb. Wild leeks are usually as called as Appalachian vegetables and that is because, these plants grow well with the mountain areas’ favorable growing conditions. The shade of deciduous trees in rich soil is just sufficient to make this plant grow well.
Wild leeks are small and subtle in nature and broad leafed. These plants usually grow together deep rooted. The depth ranges from three to six inches just under the surface of the soil. This is stinky plant that gained a top position in the American diet chart. Believe it or not, this veggie is a typical example of how anyone can prepare a delicious and yummy meal just with wild plants. There are different ways in cooking this vegetable. You can also add this veggie to soup varieties.
Cherokee (Iroquoian people residing in Appalachian Mountains, but most of the people are now in Oklahoma) consume this plant as a spring tonic for croup and cold. They use the warm of juice of this plant to treat ear pains. Ojibwa (A member of North American people around Lake Superior region) utilizes the decoction of the plant as a medicine to arrest nausea and vomiting.
Ulluco is high in carbohydrates and rich dietary fiber that comes with low fat levels. Larger the amount of fiber less the risk of diabetes. They can either eaten raw or cooked. You can have the diet in the raw form by adding it in vegetable salads. A notable advantage of this vegetable is that, it can be consumed at all the stages of its growth.
